Judith Palmer Capertina
Judith Palmer Capertina has been creating Culinary confections for over 39 years and has returned to the island of Kauai. She was the Executive Pastry Chef at the 5 Star Princeville Resort in September 1993 - April 1995, opening after Hurricane Iniki, returning to the property that is now the St. Regis Resort and Spa.
Judy is now the founder and owner of Haole Girl Island Sweets doing Farm to Table products at Farmers Markets and various locations on-island. Judy's specialty is her amazing Croissants, Wedding Cakes, and Chocolate Work.
As an Honors Graduate of the Culinary Institute of America, Judy has been the coordinating Pastry Chef at the Cannes Film Festival in France and Sundance Festival for over 15 years.
As Executive Pastry Chef of the Arizona Biltmore, she was a featured Chef at James Beard House in September 2004.
She also previously served as Executive Pastry Chef at the 5 Star Phoenician Resort in Scottsdale Arizona for seven years after having transferred from the Princeville Resort.
Judy has held many key positions in the industry like Chocolatier at the Grand Wailea Resort in Maui, and Executive Pastry Chef at the Inn at Spanish Bay, Pebble Beach California.
Judy has also helped over forty students with externships from various culinary schools all over the nation.
Earlier in her career, Judy was part of the opening and working team for the Grand Hyatt NYC, The Four Seasons Dallas and Philadelphia, and a lead instructor at Le Cordon Bleu in Scottsdale Arizona.
Judy Palmer Capertina has also been featured on the Food Network, on several T.V. Stations and multiple magazines and publications, including Arizona Bride Magazine, Alaska Bride, Gourmet, Bon Appetit, Tasting Kauai Book and Pastry Art and Design. She is in a chapter in "Creating Chefs."
Judy is also a member of the Kauai Farm Bureau and Kauai Made.
